It was eleven years ago when John Melanson opened the doors to Carol’s Hungry Mind Café and the rich aromas of Espresso, scones, custom sandwiches and sounds of conversation and laughter became a part of downtown life in Middlebury. Carol’s Hungary Mind II has just opened at 7404 Ethan Allen Highway between Middlebury and Vergennes and has that with more plans on the way. Open 7:00 a.m. – 2:00 p.m. seven days a week, Abigail Wentz and Tristann Sandler are on hand to make the perfect Espresso or package up for you a muffin, scone, custom sandwich or a coffee made just to your liking. Future plans include a diner portion opening at the same location and a creemee stand later this year. So stop by and have some coffee, conversation and see why while one Carol’s was great, two will be even better
