Maple Sugaring Season Underway

By Mike Cameron

Imagine how many gallons of sap this big old maple tree near Panton town line has surrendered over the years.  Sugaring usually begins when the temperature reaches 45ºF.  The process usually takes approximately 40 gallons of sap to produce each gallon of syrup. Trees are usually 12” in diameter at chest height before they are considered for tapping. For more information on “the official taste of Vermont,” you can visit vermontmaple.org on the web. The Vermont maple story is as old as the Green Mountains themselves.
